Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 16 oz (450 g) cream cheese, softened
- 2/3 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chocolate chips (milk or semi-sweet)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
- In a medium bowl, combine graham cracker crumbs, 2 tablespoons sugar, and melted butter. Mix until the crumbs hold together.
- Press the crumb mixture firmly into the bottom of the prepared pan.
- Bake the crust for 8–10 minutes until lightly golden, then allow it to cool slightly.
- In a large bowl, beat cream cheese with 2/3 cup sugar until smooth and creamy.
- Beat in eggs one at a time, followed by vanilla extract. Mix until fully incorporated.
- Pour the cheesecake filling over the cooled crust and spread evenly.
- Sprinkle chocolate chips evenly on top, gently pressing a few into the surface.
- Bake for 25–30 minutes, or until edges are set and the center slightly jiggles.
- Cool at room temperature for 15 minutes, then chill in the refrigerator for at least 2 hours.
- Lift bars out using parchment paper and slice into squares with a sharp knife.
Notes
Use room-temperature cream cheese for a smooth filling.
Press crust firmly to avoid crumbling when cutting.
Chocolate chips can be substituted or combined with nuts, caramel, or other add-ins.
Bars are best served chilled for clean slices and optimal texture.
