  • 1/2 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 oz (450 g) cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips (milk or semi-sweet)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
  2. In a medium bowl, combine graham cracker crumbs, 2 tablespoons sugar, and melted butter. Mix until the crumbs hold together.
  3. Press the crumb mixture firmly into the bottom of the prepared pan.
  4. Bake the crust for 8–10 minutes until lightly golden, then allow it to cool slightly.
  5. In a large bowl, beat cream cheese with 2/3 cup sugar until smooth and creamy.
  6. Beat in eggs one at a time, followed by vanilla extract. Mix until fully incorporated.
  7. Pour the cheesecake filling over the cooled crust and spread evenly.
  8. Sprinkle chocolate chips evenly on top, gently pressing a few into the surface.
  9. Bake for 25–30 minutes, or until edges are set and the center slightly jiggles.
  10. Cool at room temperature for 15 minutes, then chill in the refrigerator for at least 2 hours.
  11. Lift bars out using parchment paper and slice into squares with a sharp knife.
