Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1/4 cup freshly squeezed lemon juice
  • zest of 1 lemon
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar, sifted
  • 1/2 teaspoon agar-agar, previously dissolved in warm water
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium saucepan over medium heat, combine 1 cup of water and ½ cup of unsalted butter. Stir until the butter melts completely.
  3. Once boiling, remove from heat and add 1 cup of all-purpose flour all at once.
  4. Stir vigorously until combined into a smooth ball of dough.
  5. Allow the dough to cool slightly (about 5 minutes).
  6. Add 4 large eggs one at a time, mixing well after each addition until fully incorporated and smooth.
  7. Line two baking sheets with parchment paper.
  8. Using a piping bag fitted with a large round tip, pipe small mounds (about 1 inch in diameter) spaced about 2 inches apart on the prepared sheets.
  9. Wet your finger with water and gently press down any peaks on top of each mound.
  10. Bake in preheated oven for about 20-25 minutes or until puffed up and golden brown.
  11. Once done, remove from oven and let cool completely on wire racks.
  12. In a mixing bowl, blend together 8 ounces of softened cream cheese and 1 cup of powdered sugar until smooth and creamy.
  13. Add in the zest of one lemon and ¼ cup of freshly squeezed lemon juice along with 1 teaspoon of vanilla extract.
  14. Sprinkle in ½ teaspoon of agar-agar previously dissolved in warm water for that perfect texture.
  15. Once cooled completely, use a sharp knife or piping bag fitted with a small tip to make an incision at the bottom of each puff.
  16. Fill generously with your lemon cream mixture.
  17. Garnish with fresh lemon zest or dust lightly with powdered sugar before serving.

Notes

Store cream puffs in airtight container.

Reheat briefly in oven for freshness.

Serve with fresh berries on top.
