  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Gather all your ingredients before starting.
  2. Pour the milk into a medium saucepan and heat it over medium heat until warm but not boiling. Stir occasionally.
  3. Add the rolled oats and a pinch of salt to the warm milk. Stir well.
  4. Cook the oats for 5 to 7 minutes, stirring frequently until the mixture thickens and becomes creamy.
  5. In a separate bowl, whisk the egg, sugar, and vanilla extract until smooth and slightly frothy.
  6. Slowly temper the egg mixture by adding a few spoonfuls of the hot oat mixture into the bowl while whisking continuously.
  7. Pour the tempered egg mixture back into the saucepan with the oats, stirring constantly to prevent curdling.
  8. Cook on low heat for 3 to 4 minutes, stirring until the custard oatmeal thickens and coats the back of your spoon. Do not let it boil.
  9. Taste and adjust sweetness. Add more sugar or a teaspoon of honey if desired.
  10. Serve warm with your favorite toppings, or cool and refrigerate for a chilled version.

Notes

Always temper the egg mixture slowly to avoid lumps or curdling.

For an egg-free alternative, use 1 tablespoon of cornstarch or custard powder mixed with 2 tablespoons of milk.

Add more milk if the oatmeal becomes too thick.

Customize with your favorite toppings such as fruit, nuts, or spices.
