- 1 cup rolled oats
- 2 cups milk (dairy or plant-based)
- 1 egg
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- A pinch of salt
- Optional toppings: sliced banana, cinnamon, honey, or fresh berries
Instructions
- Gather all your ingredients before starting.
- Pour the milk into a medium saucepan and heat it over medium heat until warm but not boiling. Stir occasionally.
- Add the rolled oats and a pinch of salt to the warm milk. Stir well.
- Cook the oats for 5 to 7 minutes, stirring frequently until the mixture thickens and becomes creamy.
- In a separate bowl, whisk the egg, sugar, and vanilla extract until smooth and slightly frothy.
- Slowly temper the egg mixture by adding a few spoonfuls of the hot oat mixture into the bowl while whisking continuously.
- Pour the tempered egg mixture back into the saucepan with the oats, stirring constantly to prevent curdling.
- Cook on low heat for 3 to 4 minutes, stirring until the custard oatmeal thickens and coats the back of your spoon. Do not let it boil.
- Taste and adjust sweetness. Add more sugar or a teaspoon of honey if desired.
- Serve warm with your favorite toppings, or cool and refrigerate for a chilled version.
Notes
Always temper the egg mixture slowly to avoid lumps or curdling.
For an egg-free alternative, use 1 tablespoon of cornstarch or custard powder mixed with 2 tablespoons of milk.
Add more milk if the oatmeal becomes too thick.
Customize with your favorite toppings such as fruit, nuts, or spices.
