  • 250g beef, thinly sliced
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 2 tablespoons vegetable oil
  • 2 eggs, lightly beaten
  • Salt and pepper, to taste
  • Chopped green onions, for garnish

Instructions

  1. Prepare ingredients: Slice beef thinly against the grain, slice the onion, and mince the garlic. Beat the eggs in a bowl. Have all sauces and seasonings ready.
  2. Cook beef: Heat 1 tablespoon vegetable oil in a skillet over medium-high heat. Add beef, season lightly, and sear for 2–3 minutes until browned but not fully cooked. Remove and set aside.
  3. Sauté onions and garlic: In the same skillet, add remaining oil. Cook onions until golden brown and slightly caramelized, about 5 minutes. Add garlic and cook 30 seconds.
  4. Cook eggs: Push onions and garlic aside, pour in beaten eggs, cook for 1 minute, then scramble gently. Mix eggs with onions and garlic.
  5. Add rice: Add cooked rice, breaking up clumps. Stir to coat rice with onion and egg mixture.
  6. Combine beef and season: Return beef to skillet. Add soy sauce and optional oyster sauce. Stir-fry 2–3 minutes until beef is fully cooked and ingredients are combined. Adjust seasoning with salt and pepper.
  7. Garnish and serve: Remove from heat, sprinkle with chopped green onions, and serve immediately.
