Ingredients
- 2 cups cooked rice (preferably day-old)
- 250g beef, thinly sliced
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 2 tablespoons vegetable oil
- 2 eggs, lightly beaten
- Salt and pepper, to taste
- Chopped green onions, for garnish
Instructions
- Prepare ingredients: Slice beef thinly against the grain, slice the onion, and mince the garlic. Beat the eggs in a bowl. Have all sauces and seasonings ready.
- Cook beef: Heat 1 tablespoon vegetable oil in a skillet over medium-high heat. Add beef, season lightly, and sear for 2–3 minutes until browned but not fully cooked. Remove and set aside.
- Sauté onions and garlic: In the same skillet, add remaining oil. Cook onions until golden brown and slightly caramelized, about 5 minutes. Add garlic and cook 30 seconds.
- Cook eggs: Push onions and garlic aside, pour in beaten eggs, cook for 1 minute, then scramble gently. Mix eggs with onions and garlic.
- Add rice: Add cooked rice, breaking up clumps. Stir to coat rice with onion and egg mixture.
- Combine beef and season: Return beef to skillet. Add soy sauce and optional oyster sauce. Stir-fry 2–3 minutes until beef is fully cooked and ingredients are combined. Adjust seasoning with salt and pepper.
- Garnish and serve: Remove from heat, sprinkle with chopped green onions, and serve immediately.
Notes
Use day-old rice for better texture.
Customize with vegetables like peas, carrots, or bell peppers.
Swap beef for chicken, turkey, or tofu if desired.
Adjust soy sauce or seasoning according to taste.
