- 1 pound breakfast sausage, ground chicken or turkey
- 2 cups pancake mix
- 2 cups milk
- 3 large eggs
- 1/4 cup pure maple syrup
- Fresh berries (optional), ripe blueberries or strawberries
Instructions
- In a large skillet over medium heat, cook 1 pound of ground chicken or turkey sausage until browned and fully cooked. Break it into crumbles as it cooks. Once done, drain any excess fat and set aside to cool slightly.
- In a mixing bowl, combine 2 cups of pancake mix with 2 cups of milk and 3 large eggs. Whisk until smooth—no lumps allowed unless you’re adding character! If using berries, gently fold them in after mixing.
- In an oiled 9×13-inch baking dish, spread the cooked sausage evenly across the bottom. Pour the pancake batter over the sausage layer gently so they remain distinct.
- Drizzle about 1/4 cup of pure maple syrup over the top of your batter-covered sausage.
- Cover your baking dish with plastic wrap and refrigerate overnight.
- The next morning, preheat your oven to 350°F (175°C). Remove the cover from the baking dish and bake for approximately 25-30 minutes or until golden brown on top and cooked through. Garnish with fresh berries if desired and serve immediately.
Notes
Store leftovers in an airtight container.
Reheat slices in the microwave quickly.
Serve with fresh fruit or maple syrup.
Use cooked sausage for easier preparation.
