- 1 lb ground chicken, fresh
- 1 package potstickers, pre-made or homemade
- 6 cups chicken broth, low-sodium
- 2 green onions, sliced (white and green parts)
- 3 cloves garlic, minced
- 1 inch ginger root, grated or minced
- 2 tablespoons soy sauce, low sodium
- 2 cups vegetables (like bok choy or spinach), chopped
Instructions
- In a large pot, pour in 6 cups of chicken broth and bring it to a gentle boil over medium heat.
- Add minced garlic and grated ginger to the broth.
- Stir in 2 tablespoons of soy sauce and mix well.
- Carefully add your potstickers into the pot one by one and cook them according to package instructions, usually around 5-7 minutes until they float to the surface.
- Add your chopped bok choy or spinach just before serving.
- Ladle the soup into bowls and sprinkle with sliced green onions on top.
Notes
Store leftover soup in airtight containers.
Reheat on stovetop for best flavor.
Serve with chopped green onions sprinkled.
Use fresh ginger for extra zing!
