  • 1 ½ cups all-purpose flour, sifted
  • 2 teaspoons baking powder
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • ¼ cup freshly squeezed lime juice
  • zest of 1 medium lime
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • sea salt, for topping
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 2 tablespoons lime juice (for frosting)
  • lime wedges (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 12-cup muffin pan with cupcake liners.
  3. In a medium bowl, whisk together 1 ½ cups of all-purpose flour and 2 teaspoons of baking powder until combined.
  4. In a large mixing bowl, beat together ½ cup of softened unsalted butter and 1 cup of granulated sugar using an electric mixer on medium speed until light and fluffy—about 2-3 minutes.
  5. Add in 2 large eggs one at a time, mixing well after each addition.
  6. Pour in ¼ cup of freshly squeezed lime juice along with zest from one medium lime.
  7. Slowly add your dry ingredients into the wet mixture while alternating with another ¼ cup of room temperature milk (or plant-based milk).
  8. Mix until just combined—don’t over-mix or you’ll end up with tough cupcakes.
  9. Spoon the batter into prepared liners, filling each about two-thirds full.
  10. Bake in preheated oven for about 18-20 minutes or until golden brown and a toothpick comes out clean when inserted into the center.
  11. Once baked, remove from oven and let cool in the pan for about five minutes before transferring them onto wire racks to cool completely.
  12. While cooling, beat together 8 oz of cream cheese (softened) with about 2 cups powdered sugar until smooth.
  13. Add another splash (about 2 tablespoons) of lime juice along with some zest if desired!
  14. Beat until fluffy.
  15. Once cooled completely, swirl on generous amounts of frosting using either a spatula or piping bag for extra pizzazz.
  16. Top each cupcake with a pinch of sea salt.

Notes

Store cupcakes in an airtight container.
