- 4 cups fresh tomatoes, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups chicken broth, low-sodium
- 2 tablespoons olive oil, extra virgin
- 1/2 cup all-purpose flour
- 1 teaspoon black pepper, freshly cracked
- 1 teaspoon dried basil
Instructions
- In a large skillet over medium heat, add two tablespoons of olive oil.
- Once heated, toss in one diced onion and sauté until translucent (about 4-5 minutes).
- Add three minced garlic cloves and cook for another minute until fragrant but not browned.
- Stir in four cups of chopped fresh tomatoes into the skillet with the onions and garlic.
- Let them simmer together for about 10 minutes until they start breaking down into a lovely saucy mixture.
- Sprinkle in half a cup of all-purpose flour evenly over the tomato mixture.
- Stir continuously for about two minutes until it turns golden brown.
- Gradually pour in two cups of chicken broth while stirring constantly.
- Bring this mixture to a gentle boil; then reduce heat and let it simmer for another 5-7 minutes until thickened.
- Add salt to taste, along with freshly cracked black pepper and one teaspoon of dried basil.
- Stir well to combine all those fabulous flavors.
- Garnish your Southern Tomato Gravy with fresh basil leaves if desired.
- Serve immediately over warm biscuits or creamy grits.
Notes
Store leftover gravy in airtight containers.
Reheat slowly on low heat.
