- 2 soft flour tortillas
- 2 ripe peaches, sliced
- 1 cup shredded cheese (mozzarella and cheddar blend)
- 2 tablespoons chopped fresh basil or mint
- pinch of cayenne pepper or chili flakes
- olive oil for brushing
Instructions
- Heat a non-stick skillet over medium heat.
- Slice two ripe peaches into thin wedges.
- Combine peach slices with 1 cup of shredded cheese, 2 tablespoons chopped fresh basil or mint, and a pinch of cayenne pepper or chili flakes in a mixing bowl.
- Take one tortilla and spread half of the peach filling on one side, then fold it over like a taco.
- Brush one side of the folded quesadilla with olive oil.
- Place the quesadilla in the preheated skillet, oiled side down.
- Cook for about 3-4 minutes until golden brown and crispy.
- Flip the quesadilla carefully and cook the other side until equally golden brown.
- Once both sides are crispy, use a sharp knife to cut the quesadilla into wedges.
- Garnish with extra fresh herbs if desired and serve immediately.
Notes
Store leftovers in an airtight container for freshness.
Reheat in a skillet for crispiness.
Serve with yogurt or ice cream.
