  • 2 soft flour tortillas
  • 2 ripe peaches, sliced
  • 1 cup shredded cheese (mozzarella and cheddar blend)
  • 2 tablespoons chopped fresh basil or mint
  • pinch of cayenne pepper or chili flakes
  • olive oil for brushing

Instructions

  1. Heat a non-stick skillet over medium heat.
  2. Slice two ripe peaches into thin wedges.
  3. Combine peach slices with 1 cup of shredded cheese, 2 tablespoons chopped fresh basil or mint, and a pinch of cayenne pepper or chili flakes in a mixing bowl.
  4. Take one tortilla and spread half of the peach filling on one side, then fold it over like a taco.
  5. Brush one side of the folded quesadilla with olive oil.
  6. Place the quesadilla in the preheated skillet, oiled side down.
  7. Cook for about 3-4 minutes until golden brown and crispy.
  8. Flip the quesadilla carefully and cook the other side until equally golden brown.
  9. Once both sides are crispy, use a sharp knife to cut the quesadilla into wedges.
  10. Garnish with extra fresh herbs if desired and serve immediately.
