- 2 slices high-quality crusty bread (sourdough or ciabatta)
- 8 ounces cremini or button mushrooms, sliced
- 4 slices Swiss cheese (thick)
- 1 tablespoon unsalted butter
- 1 teaspoon garlic powder
- Fresh spinach (optional, for layering)
Instructions
- Start by cleaning 8 ounces of mushrooms using a damp paper towel to wipe away dirt.
- Slice the mushrooms thinly so they cook evenly.
- Heat 1 tablespoon of butter in a medium skillet over medium heat until melted.
- Add the sliced mushrooms along with 1 teaspoon of garlic powder.
- Sauté the mushrooms until they become golden brown and tender—about 5-7 minutes.
- Season the cooked mushrooms with salt and pepper to taste.
- If desired, toss in some fresh spinach and sauté for another minute until just wilted.
- Grab two slices of your crusty bread.
- Lay one slice on a clean surface and top it generously with half of the sautéed mushroom mixture.
- Place two slices of Swiss cheese on top.
- Spread about 1 tablespoon of butter on the outer sides of each slice of bread.
- Heat a clean skillet over medium heat and carefully place your sandwich in it once hot.
- Grill on one side until golden brown—around 3-5 minutes—then flip carefully to grill the other side.
- Once both sides are beautifully toasted and the cheese has melted, remove from heat.
- Slice the sandwich in half diagonally and serve immediately while warm.
Notes
Store leftovers in an airtight container.
Reheat in a skillet for crispiness.
