  • 2 cups cooked white or brown rice
  • 1 lb ground beef
  • 1 packet taco seasoning or homemade mix
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup chopped onions
  • 1/4 cup chopped cilantro (optional)
  • 1 cup crushed Doritos (Nacho Cheese or your favorite flavor)
  • 1/2 cup sour cream or plain Greek yogurt
  • 1 avocado, sliced (optional)
  • 1 cup canned black beans, drained and rinsed
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook 2 cups of rice according to the package instructions. Optionally, cook in low-sodium chicken broth for added flavor. Fluff with a fork and set aside.
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add 1 lb ground beef and cook until browned, breaking up the meat with a spatula. Drain excess fat.
  3. Sprinkle 1 packet taco seasoning over the beef. Add 1/4 cup water and stir to coat evenly. Cook for 2–3 minutes until slightly thickened.
  4. Chop 1 cup lettuce, 1 cup tomatoes, 1/2 cup onions, and 1/4 cup cilantro. Drain and rinse 1 cup black beans. Set aside.
  5. In a large serving bowl, layer the cooked rice as the base. Spread the seasoned beef evenly over the rice.
  6. Add chopped lettuce, diced tomatoes, onions, and black beans on top of the beef.
  7. Sprinkle shredded cheese over the vegetables. Add sliced avocado if desired.
  8. Crush 1 cup Doritos and sprinkle over the bowl just before serving to maintain crunch.
  9. Add 1/2 cup sour cream or plain Greek yogurt on top. Garnish with extra cilantro and optional hot sauce.

Notes

For a vegetarian version, replace beef with plant-based crumbles or lentils.

Store Doritos separately until serving to maintain their texture.

Customize toppings according to taste: corn, bell peppers, or jalapeños work well.
