Instructions
- Preheat your oven to 375°F (190°C).
- Line a baking dish with parchment paper.
- In a medium saucepan over medium heat, combine one can of full-fat coconut milk, 2 tablespoons of freshly squeezed lemon juice, 2 minced garlic cloves, and 1 tablespoon of grated ginger.
- Stir continuously until heated through and fragrant but not boiling.
- Place your fresh cod fillets in the prepared baking dish.
- Generously sprinkle salt and pepper over both sides of each fillet.
- Carefully pour the warmed coconut lemon sauce over the seasoned cod fillets, ensuring they are well-covered.
- Pop the baking dish into your preheated oven and bake for approximately 20-25 minutes.
- Check if the fish flakes easily with a fork and looks beautifully opaque.
- Let it rest for about five minutes before serving.
- Garnish with freshly chopped cilantro just before serving.
