- 1 cup all-purpose flour
- 1/2 cup almond flour, finely ground
- 1 teaspoon baking powder
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup marzipan, chopped
- sliced almonds, optional
Instructions
- Preheat your oven to 350°F (175°C).
- Grease an 8×8-inch baking pan with cooking spray or line it with parchment paper.
- In a medium bowl, whisk together 1 cup all-purpose flour, ½ cup almond flour, and 1 teaspoon baking powder until well combined.
- In another mixing bowl, beat together ½ cup unsalted butter and ¾ cup granulated sugar until light and fluffy.
- Add in one large egg and 1 teaspoon of vanilla extract to the butter-sugar mixture. Beat until well combined.
- Gradually fold in the dry ingredients into the wet mixture using a spatula until no dry flour remains visible.
- Gently fold in about ½ cup chopped marzipan pieces into your batter until evenly distributed.
- Pour the batter into your prepared pan and spread it into an even layer using a spatula. Bake for about 25-30 minutes or until golden brown on top and a toothpick inserted comes out clean.
- Once baked, remove from the oven and let cool completely in the pan before slicing into squares or bars.
Notes
Store cookie bars in airtight container.
Reheat in oven for best results.
Serve with whipped cream topping.
