- 1 cup blackberries, rinsed and dried
- 2 cups all-purpose flour, sifted
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs, at room temperature
- 1/2 cup vegetable oil
- 1 cup milk, whole or plant-based
- coconut sugar (optional), for added flavor
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan with cooking spray or butter.
- Gently rinse 1 cup of blackberries under cool water. Pat them dry with paper towels and set aside. If desired, sprinkle them lightly with sugar and let them sit while you mix your batter.
- In a large mixing bowl, combine 2 cups of all-purpose flour, 1 cup of granulated sugar, 2 teaspoons of baking powder, and ½ teaspoon of salt. Stir until evenly mixed.
- In another bowl, whisk together 2 large eggs, ½ cup of vegetable oil, and 1 cup of milk until smooth and creamy. Add this mixture to the dry ingredients and stir gently until just combined.
- Carefully fold in the prepared blackberries into the batter using a spatula.
- Pour the batter into the greased loaf pan and spread evenly. Bake in the preheated oven for about 50-60 minutes or until golden brown on top and a toothpick inserted in the center comes out clean.
- Once baked, remove from oven and let it cool in the pan for about 10 minutes before transferring it onto a wire rack. Slice once fully cooled and serve warm or at room temperature.
Notes
Store leftover bread in airtight container.
Reheat slices in toaster oven.
Serve warm with whipped cream.
