- 4 boneless, skinless chicken breasts
- 1 cup diced apples, firm varieties like Granny Smith or Honeycrisp
- 1 cup crumbled brie cheese, at room temperature
- 1 cup fresh spinach, chopped
- 1/2 cup breadcrumbs, plain or seasoned
- 1/2 cup chicken broth
- Olive oil, for drizzling
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine 1 cup of diced apples, 1 cup of crumbled brie cheese, 1 cup of fresh spinach (chopped), and ½ cup of breadcrumbs. Mix thoroughly until everything is well incorporated.
- Take each chicken breast and carefully slice it horizontally (like you're creating a pocket) without cutting all the way through. Generously fill each pocket with the apple-brie mixture until it is nicely packed but not overflowing.
- Using toothpicks, secure each stuffed chicken breast closed.
- Drizzle olive oil over the stuffed chicken breasts and sprinkle them with salt and pepper for extra seasoning. Place them in a baking dish and pour ½ cup of chicken broth around them before popping them in the oven. Bake for about 25-30 minutes until golden brown and cooked through.
- Once out of the oven, allow your Apple and Brie Stuffed Chicken to rest for about five minutes before removing toothpicks.
Notes
Store leftovers in an airtight container.
Reheat in oven for crispiness.
Serve with a side salad.
