- 1 ½ cups all-purpose flour
- ½ cup cold unsalted butter, cubed
- 4–6 tablespoons ice water
- 3 Granny Smith apples, peeled and sliced
- ¼ cup brown sugar
- 1 teaspoon cinnamon
- Pecan or walnut pieces (optional)
Instructions
- In a large mixing bowl, combine 1 ½ cups all-purpose flour with ½ cup cold unsalted butter cubes.
- Using your fingers or a pastry cutter, mix until it resembles coarse crumbs.
- Gradually add about 4-6 tablespoons of ice water until just combined.
- Form into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat your oven to 400°F (200°C).
- Peel and slice 3 Granny Smith apples into thin wedges.
- In a mixing bowl, toss together the apple slices with ¼ cup brown sugar, 1 teaspoon cinnamon, and optional pecan or walnut pieces.
- On a floured surface, roll out your chilled dough into about a 12-inch circle.
- Transfer it onto a parchment-lined baking sheet.
- Spread half of your sharp cheddar cheese evenly over the center of your dough circle while leaving about an inch border around the edges.
- Layer the apple slices on top of the cheese.
- Sprinkle remaining cheddar over the apples.
- Carefully fold up the edges of your dough over the filling.
- Brush with additional melted butter if desired and sprinkle some extra brown sugar on top.
- Bake in preheated oven for about 35-40 minutes or until golden brown.
- Garnish with fresh mint before serving.
Notes
Store leftovers in an airtight container.
Reheat slices in the oven briefly.
Serve warm with a scoop of ice cream.
