  • 3 Granny Smith apples, peeled and sliced
  • ¼ cup brown sugar
  • 1 teaspoon cinnamon
  • Pecan or walnut pieces (optional)

Instructions

  1. In a large mixing bowl, combine 1 ½ cups all-purpose flour with ½ cup cold unsalted butter cubes.
  2. Using your fingers or a pastry cutter, mix until it resembles coarse crumbs.
  3. Gradually add about 4-6 tablespoons of ice water until just combined.
  4. Form into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  5. Preheat your oven to 400°F (200°C).
  6. Peel and slice 3 Granny Smith apples into thin wedges.
  7. In a mixing bowl, toss together the apple slices with ¼ cup brown sugar, 1 teaspoon cinnamon, and optional pecan or walnut pieces.
  8. On a floured surface, roll out your chilled dough into about a 12-inch circle.
  9. Transfer it onto a parchment-lined baking sheet.
  10. Spread half of your sharp cheddar cheese evenly over the center of your dough circle while leaving about an inch border around the edges.
  11. Layer the apple slices on top of the cheese.
  12. Sprinkle remaining cheddar over the apples.
  13. Carefully fold up the edges of your dough over the filling.
  14. Brush with additional melted butter if desired and sprinkle some extra brown sugar on top.
  15. Bake in preheated oven for about 35-40 minutes or until golden brown.
  16. Garnish with fresh mint before serving.
