  • 1 tablespoon baking powder
  • 1 teaspoon granulated sugar

  • 1 cup milk
  • 2 large eggs, beaten
  • 1/2 teaspoon pecan or almond extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together all-purpose flour, baking powder, granulated sugar, and cinnamon until combined.
  3. In another bowl, melt unsalted butter and let it cool slightly. Then mix in honey, milk, beaten eggs, and pecan or almond extract. Stir until smooth.
  4. Pour the wet mixture into the dry ingredients gradually, folding gently until just combined.
  5. Gently fold in chopped walnuts or pistachios until evenly distributed throughout the batter.
  6. Spoon the batter into your prepared muffin tin, filling each liner about three-quarters full.
  7. Pop the muffins into your preheated oven and bake for about 18-20 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Let them cool in the tin for about five minutes before transferring them to a wire rack. Drizzle with extra honey if desired and garnish with crushed nuts before serving.
