Instructions
- In a large bowl, combine ¼ cup olive oil, 2 tablespoons honey, juice from one lemon, 1 tablespoon fresh thyme leaves (chopped), salt, and pepper.
- Add 4 boneless chicken breasts and ensure they’re thoroughly coated in this mixture.
- Cover the bowl with plastic wrap and let it marinate in the fridge for at least 30 minutes.
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Lightly grease a baking dish with non-stick spray or a bit of oil.
- Place marinated chicken breasts in the baking dish in a single layer.
- Scatter one cup of fresh blueberries around the chicken, pressing them slightly into the marinade.
- Slide your baking dish into the preheated oven and bake for 25-30 minutes or until the chicken reaches an internal temperature of 165 degrees Fahrenheit (75 degrees Celsius).
- Remove from oven and allow resting for about five minutes.
- Garnish with additional thyme sprigs, serve immediately alongside roasted vegetables or fluffy rice pilaf.
