- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup cocoa powder
- ¾ cup vegetable oil
- 3 large eggs
- 1 cup buttermilk
- 1 tablespoon vanilla extract
- 1 cup fresh blackberries
- 8 ounces cream cheese
- 3 cups powdered sugar
- 2 tablespoons lemon juice
Instructions
- Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans with cooking spray or butter, then line them with parchment paper for easy removal once baked.
- In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 ½ cups granulated sugar, 1 teaspoon baking soda, 1 teaspoon baking powder, ½ teaspoon salt, and ½ cup cocoa powder until well combined.
- In another bowl, whisk together ¾ cup vegetable oil, 3 large eggs, 1 cup buttermilk, and 1 tablespoon vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients bowl. Stir gently until just combined; be careful not to overmix! Fold in 1 cup of fresh blackberries so they’re evenly distributed throughout the batter.
- Divide the batter evenly between the prepared pans. Bake in your preheated oven for about 25-30 minutes or until a toothpick inserted into the center comes out clean. Once baked, allow them to cool in pans for about 10 minutes before transferring them onto wire racks.
- While your cakes cool completely, beat together 8 ounces of cream cheese and gradually add in 3 cups powdered sugar until smooth. Stir in 2 tablespoons lemon juice and fold in some finely mashed blackberries from an additional cup until fully incorporated.
- Once cakes are completely cool, place one layer on a serving plate or stand. Generously spread half of your luscious blackberry frosting on top before placing the second layer on top. Finish by spreading more frosting over the top and sides of your beautiful creation.
Notes
Store leftovers in an airtight container.
Reheat slices gently in microwave.
Serve with fresh blackberries on top.
