  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 ounces cream cheese, softened

  • 2 ripe bananas, sliced
  • 2 tablespoons coconut sugar or brown sugar
  • 2 tablespoons agar-agar powder
  • 1 cup fruit juice (like orange juice)
  • Pecan nuts (optional), toasted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine 1 ½ cups graham cracker crumbs and ½ cup melted unsalted butter until well mixed.
  3. Press this mixture firmly into the bottom of a 9-inch springform pan.
  4. Bake in the preheated oven for about 10 minutes until set and slightly golden.
  5. In a large mixing bowl, beat together 16 ounces of softened cream cheese and 1 cup granulated sugar until smooth and creamy.
  6. Add in 1 teaspoon vanilla extract and 1 cup sour cream, mixing until fully combined.
  7. Once your crust has cooled slightly, pour the cheesecake filling over it, spreading evenly with a spatula.
  8. Tap gently on the counter to release any air bubbles trapped inside.
  9. Bake in your preheated oven at 325°F (160°C) for about 50-60 minutes or until just set in the center but still slightly jiggly.
  10. Turn off the oven and crack open its door; let cool inside for about an hour before transferring it to chill in the refrigerator for at least four hours or overnight.
  11. In a skillet over medium heat, add two sliced ripe bananas along with 2 tablespoons coconut sugar or brown sugar.
  12. Cook until they turn golden brown and caramelized—about 3-4 minutes per side should do!
  13. Remove from heat once done.
  14. For your glaze, mix together two tablespoons of agar-agar powder with one cup fruit juice in a small saucepan over low heat until dissolved completely.
  15. Let cool slightly before pouring over your caramelized bananas.
  16. To serve, top each slice generously with those luscious caramelized bananas and drizzle with your homemade fruit juice glaze.
  17. Garnish with chopped pecans if desired for some extra crunch.
