- 3 large ripe bananas, freckled and soft
- 1 cup fresh cherries, pitted
- 1 cup semi-sweet chocolate chips
- 2 cups all-purpose flour, sifted
- 1 teaspoon baking soda
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with cooking spray or line it with parchment paper.
- In a large mixing bowl, mash the ripe bananas using a fork until smooth.
- Add sugar, vegetable oil, vanilla extract, and salt to the mashed bananas. Mix everything together until well combined.
- In another bowl, whisk together all-purpose flour and baking soda.
- Gradually fold the dry mixture into the wet ingredients using a spatula or wooden spoon until just combined. Gently fold in fresh cherries and chocolate chips.
- Pour the batter into your prepared loaf pan and smooth out the top with a spatula. Bake in your preheated oven for about 55-60 minutes or until a toothpick inserted into the center comes out clean.
- Once done baking, allow it to cool in the pan for about 10 minutes before transferring it onto a wire rack. Let it cool completely before slicing.
Notes
Store banana bread in airtight container.
Reheat slices in microwave briefly.
Serve with whipped cream topping.
