  • 16 ounces cream cheese, room temperature
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 2 teaspoons vanilla extract
  • 1 ½ cups graham cracker crumbs
  • ½ cup melted butter, slightly cooled
  • 2 teaspoons agar-agar powder
  • ½ cup water
  • ½ cup chopped pistachios, unsalted and shelled
  • 1 cup cherries, fresh or thawed if frozen

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs with melted butter until well mixed.
  3. Press this mixture firmly into the bottom of a 9-inch springform pan, forming an even layer.
  4. Bake for about 10 minutes until golden brown.
  5. Let it cool completely while you prepare the filling.
  6. In another bowl, beat together room-temperature cream cheese and granulated sugar until creamy and smooth.
  7. Add in sour cream and continue mixing until fully incorporated.
  8. Scrape down the sides occasionally to ensure everything is well combined.
  9. Add vanilla extract and fold in half of your chopped pistachios along with half of your prepared cherries.
  10. Gently mix until evenly distributed throughout the filling.
  11. In a small saucepan, combine agar-agar powder with water over medium heat.
  12. Stir constantly until it dissolves completely.
  13. Once dissolved, let it cool slightly before adding it into your cream cheese mixture.
  14. Mix until well combined.
  15. Pour the creamy filling over your cooled crust in the springform pan and smooth out the top with a spatula.
  16. Scatter the remaining chopped cherries on top and sprinkle with the rest of those crunchy pistachios.
  17. Cover tightly with plastic wrap and refrigerate for at least four hours or overnight.
  18. Once set, carefully remove from the springform pan by running a knife around the edges first.
  19. Slice into wedges and serve chilled.

Notes

Store leftovers in an airtight container.

Reheat individual slices briefly in microwave.
