- 16 ounces cream cheese, room temperature
- 1 cup granulated sugar
- 1 cup sour cream
- 2 teaspoons vanilla extract
- 1 ½ cups graham cracker crumbs
- ½ cup melted butter, slightly cooled
- 2 teaspoons agar-agar powder
- ½ cup water
- ½ cup chopped pistachios, unsalted and shelled
- 1 cup cherries, fresh or thawed if frozen
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs with melted butter until well mixed.
- Press this mixture firmly into the bottom of a 9-inch springform pan, forming an even layer.
- Bake for about 10 minutes until golden brown.
- Let it cool completely while you prepare the filling.
- In another bowl, beat together room-temperature cream cheese and granulated sugar until creamy and smooth.
- Add in sour cream and continue mixing until fully incorporated.
- Scrape down the sides occasionally to ensure everything is well combined.
- Add vanilla extract and fold in half of your chopped pistachios along with half of your prepared cherries.
- Gently mix until evenly distributed throughout the filling.
- In a small saucepan, combine agar-agar powder with water over medium heat.
- Stir constantly until it dissolves completely.
- Once dissolved, let it cool slightly before adding it into your cream cheese mixture.
- Mix until well combined.
- Pour the creamy filling over your cooled crust in the springform pan and smooth out the top with a spatula.
- Scatter the remaining chopped cherries on top and sprinkle with the rest of those crunchy pistachios.
- Cover tightly with plastic wrap and refrigerate for at least four hours or overnight.
- Once set, carefully remove from the springform pan by running a knife around the edges first.
- Slice into wedges and serve chilled.
Notes
Store leftovers in an airtight container.
Reheat individual slices briefly in microwave.
Serve with whipped cream topping.
Chill cheesecake overnight for best flavor.
