Instructions

  3. Remove the saucepan from heat and stir in 6 ounces of bittersweet chocolate, chopped into small pieces.
  4. Mix until smooth and all chocolate is melted.
  5. Next, pour in ½ cup of fresh orange juice along with the zest from one orange.
  6. Whisk everything together until well combined.
  7. In a small bowl, mix 1 tablespoon of agar-agar powder with 3 tablespoons of water to create a slurry.
  8. Heat this mixture in the microwave for about 30 seconds until dissolved.
  9. Stir it into your creamy chocolate-orange concoction while whisking vigorously.
  10. Pour your posset mixture into individual serving cups or bowls.
  11. Let them cool at room temperature before transferring them to the refrigerator.
  12. Chill for at least two hours or until set.
