Instructions
- In a medium saucepan, combine 2 cups of heavy cream with ½ cup of granulated sugar over medium heat.
- Stir gently until the sugar fully dissolves and the mixture begins to simmer.
- Remove the saucepan from heat and stir in 6 ounces of bittersweet chocolate, chopped into small pieces.
- Mix until smooth and all chocolate is melted.
- Next, pour in ½ cup of fresh orange juice along with the zest from one orange.
- Whisk everything together until well combined.
- In a small bowl, mix 1 tablespoon of agar-agar powder with 3 tablespoons of water to create a slurry.
- Heat this mixture in the microwave for about 30 seconds until dissolved.
- Stir it into your creamy chocolate-orange concoction while whisking vigorously.
- Pour your posset mixture into individual serving cups or bowls.
- Let them cool at room temperature before transferring them to the refrigerator.
- Chill for at least two hours or until set.
- Once set, garnish each posset with extra orange zest or some fresh berries if you're feeling fancy.
- Serve immediately to impress your guests or indulge yourself.
