Ingredients

  • 200 grams dark chocolate, at least 70% cocoa
  • 500 ml heavy cream, fresh and cold
  • 100 grams granulated sugar
  • 150 ml fresh orange juice, freshly squeezed
  • Zest of 1 orange, vibrant outer peel only
  • 2 teaspoons agar-agar powder, fine

Instructions

  1. Chop the dark chocolate into small pieces and place them in a heatproof bowl.
  2. Set the bowl over a saucepan filled with simmering water and stir until completely melted and smooth.
  3. Remove from heat and set aside to cool slightly.
  4. In a medium saucepan over medium heat, combine heavy cream and granulated sugar.
  5. Stir gently until the sugar dissolves completely, and bring it just to a simmer.
  6. Remove from heat once you see bubbles forming around the edges.
  7. Sprinkle agar-agar powder evenly into the hot cream mixture while stirring vigorously to avoid lumps.
  8. Return to low heat and cook for about 2 minutes, continuing to stir until the agar-agar is fully dissolved.
  9. Remove the saucepan from heat again and add in your melted chocolate, fresh orange juice, and orange zest.
  10. Whisk everything together until smooth and well combined.
  11. Pour your mixture into serving glasses or ramekins.
  12. Allow them to cool at room temperature for about 30 minutes before transferring them to the refrigerator.
  13. Chill for at least four hours or until set.
  14. Once set, garnish each posset with additional orange zest or shaved chocolate if desired.
  15. Serve immediately and enjoy.

Store leftovers in airtight container.
