- 2 cups cottage cheese, smooth and well-blended
- 1 cup fresh raspberries, ripe and firm
- 1/4 cup honey or maple syrup, adjust to taste
- 1 teaspoon vanilla extract, pure
- 1 tablespoon agar-agar powder
- 1/2 cup water
- 1 tablespoon lemon juice, freshly squeezed
Instructions
- In a blender or food processor, combine cottage cheese, fresh raspberries, honey or maple syrup, and vanilla extract. Blend until smooth and creamy.
- In a small saucepan, combine agar-agar powder with water. Bring it to a gentle boil over medium heat while stirring constantly until fully dissolved. Remove from heat and let it cool slightly before adding it to your mixture.
- Once your agar-agar mix has cooled down, pour it into the blended cottage cheese mixture while blending on low speed until fully incorporated.
- Pour the mousse mixture into serving glasses or bowls and refrigerate for at least 2 hours until set.
- Once set, top each serving with reserved raspberries and perhaps an extra drizzle of honey. Sprinkle some crushed nuts or granola right before serving for an unexpected crunch!
Notes
Store leftovers in an airtight container.
This mousse is best served chilled, no reheating needed.
Top with fresh raspberries for added flair.
Use high-quality cottage cheese for creaminess.
