- 1 pound sliced chicken sausage

Instructions
- In a large pot over medium heat, add 1 tablespoon of olive oil.
- Once hot, toss in 1 diced onion and 3 minced garlic cloves.
- Sauté until translucent and fragrant—about 5 minutes.
- Add 1 pound of sliced chicken sausage to the pot and cook until browned on both sides—about 5-7 minutes.
- Stir in 4 cups of diced Yukon Gold potatoes along with 4 cups of chicken broth.
- Bring everything to a boil, then reduce heat to simmer for 15-20 minutes until the potatoes are tender.
- Once your potatoes are soft, stir in 1 cup of heavy cream (or coconut milk if using).
- Allow it to simmer gently for another 5 minutes so all those flavors can meld together.
- Sprinkle in 1 teaspoon of dried thyme along with salt and pepper to taste.
- Give everything one last stir before deciding if you want it thicker—if so, follow package instructions to mix in agar-agar now.
- Ladle your creamy masterpiece into bowls and garnish with fresh herbs if desired!
