Instructions

  1. Thoroughly wash 2 cups of fresh spinach under cold water.
  2. Chop the spinach finely and set aside.
  3. Sauté the chopped spinach in a non-stick skillet over medium heat until wilted for about 2-3 minutes.
  4. Remove from heat and allow it to cool slightly.
  5. In a large mixing bowl, add 8 ounces of softened cream cheese and 1 cup of sour cream.
  6. Use an electric mixer on low speed until smooth and creamy for about 1-2 minutes.
  7. Carefully fold in the cooked shrimp, grated Parmesan cheese, chopped spinach, and garlic powder into the cream mixture.
  8. Taste the mixture and adjust seasonings as needed, adding salt and pepper according to your preference.
  9. Preheat your oven to 350°F (175°C).
  10. Transfer the dip mixture into an oven-safe dish and spread it evenly.
  11. Bake uncovered for about 20-25 minutes or until golden brown on top and bubbly around the edges.
  12. Once out of the oven, let it cool slightly before serving.
  13. Garnish with extra Parmesan or fresh herbs like parsley, if desired.
