  • 1/2 cup smooth peanut butter
  • 2 tablespoons low-sodium soy sauce

  • 1 tablespoon honey or maple syrup
  • 1 teaspoon minced garlic
  • 1 tablespoon chili paste
  • fresh cilantro, chopped

Instructions

  1. Wash cucumbers thoroughly under cold water.
  2. Slice cucumbers into thin rounds or sticks and place them in a bowl.
  3. In a medium mixing bowl, combine peanut butter, soy sauce, lime juice, honey or maple syrup, minced garlic, and chili paste.
  4. Whisk the mixture together until smooth and creamy, adding a splash of water if it’s too thick.
  5. Taste the sauce and adjust seasoning by adding more lime juice or chili paste as desired.
  6. Add the sliced cucumbers to the bowl with the spicy peanut sauce.
  7. Gently fold the cucumbers in using a spatula until every piece is coated evenly with the sauce.
  8. Transfer the mixed cucumbers and spicy peanut sauce onto a serving platter.
