- 2 cucumbers, firm and fresh
- 1/2 cup smooth peanut butter
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons freshly squeezed lime juice
- 1 tablespoon honey or maple syrup
- 1 teaspoon minced garlic
- 1 tablespoon chili paste
- fresh cilantro, chopped
Instructions
- Wash cucumbers thoroughly under cold water.
- Slice cucumbers into thin rounds or sticks and place them in a bowl.
- In a medium mixing bowl, combine peanut butter, soy sauce, lime juice, honey or maple syrup, minced garlic, and chili paste.
- Whisk the mixture together until smooth and creamy, adding a splash of water if it’s too thick.
- Taste the sauce and adjust seasoning by adding more lime juice or chili paste as desired.
- Add the sliced cucumbers to the bowl with the spicy peanut sauce.
- Gently fold the cucumbers in using a spatula until every piece is coated evenly with the sauce.
- Transfer the mixed cucumbers and spicy peanut sauce onto a serving platter.
- Sprinkle chopped cilantro over the top for garnish.
- Serve immediately.
Notes
Store leftover cucumbers in airtight containers.
Reheat gently to preserve texture.
Serve with rice for a meal.
