  • 1/2 cup cornstarch
  • 1 cup bell peppers, mixed red and green, sliced

  • 2 tablespoons honey
  • 3 tablespoons soy sauce, low-sodium
  • 2 tablespoons vinegar (rice or apple cider)
  • 1 tablespoon sesame oil, toasted
  • oil (vegetable or canola) for frying

Instructions

  1. Begin by cutting the chicken breast into bite-sized pieces (about 1-inch cubes).
  2. In a bowl, mix together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger.
  3. Toss in the chicken pieces until they're well-coated in this savory mixture.
  4. Let it marinate for at least 30 minutes.
  5. While waiting on your chicken's beauty treatment, grab another bowl and combine cornstarch with a pinch of salt and black pepper.
  6. Mix well so every grain feels loved.
  7. Once marinated, take each piece of chicken and dredge it through the cornstarch mixture until fully coated.
  8. Shake off any excess cornstarch.
  9. In a large skillet over medium-high heat, pour enough oil (vegetable or canola) to cover about 1/4 inch of the pan.
  10. Once hot, carefully add the coated pieces one by one without crowding them too much.
  11. Fry until golden brown (about 4-5 minutes per side) then remove from pan and place on paper towels to drain excess oil.
  12. In that same skillet, toss in sliced bell peppers over medium heat.
  13. Stir-fry them until they start softening (around 2-3 minutes).
  14. Pour back in the fried chicken pieces along with any remaining marinade from earlier.
  15. Stir everything together until heated through.
  16. Garnish with sesame seeds and chopped green onions just before serving.
