- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tablespoons freshly squeezed lemon juice
- 1/4 teaspoon baking powder
- 1 cup fresh blackberries
- 1/3 cup unsalted pistachios, coarsely chopped
Instructions
- Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, allowing some overhang for easy removal later.
- In a mixing bowl, combine 1 cup of all-purpose flour with 1/4 cup of granulated sugar. Cut in 1/2 cup of softened unsalted butter until crumbly. Press this mixture firmly into the bottom of your prepared pan. Bake for about 15 minutes or until lightly golden.
- While your crust is baking, grab another bowl and mix 8 oz of softened cream cheese with 1/2 cup of granulated sugar until smooth. Add in two large eggs one at a time, mixing well after each addition. Then stir in two tablespoons of freshly squeezed lemon juice followed by 1/4 teaspoon of baking powder until fully combined.
- Once your crust has cooled slightly, pour half of the cream cheese mixture over it. Sprinkle one cup of fresh blackberries evenly on top, then carefully pour the remaining cream cheese mixture over them.
- Chop about 1/3 cup of unsalted pistachios coarsely and sprinkle them generously over the top before placing your dessert bars back in the oven. Bake at 350°F (175°C) for an additional 25-30 minutes until set.
- Allow the dessert bars to cool completely in the pan before using those handy parchment paper edges to lift them out onto a cutting board. Slice into squares and serve chilled or at room temperature.
Notes
Store dessert bars in airtight container.
Warm in microwave for 10-15 seconds.
Serve with whipped cream drizzle.
