Delicious easy caramel cookie bars recipe with detailed instructions and nutritional information.

  • Total Time: 50 minutes
  • Yield: 16 servings 1x

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, light
  • 2 cups all-purpose flour, freshly sifted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips, semi-sweet
  • 1/2 cup creamy caramel sauce, for drizzling
  • Chopped nuts (optional), pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal later. Grease it lightly to ensure nothing sticks!
  2. In a large mixing bowl, combine 1 cup of softened unsalted butter with 1 cup granulated sugar and 1 cup brown sugar. Using an electric mixer on medium speed, beat until creamy and well-blended—about 2-3 minutes. Add in 2 large eggs one at a time, mixing until fully incorporated after each addition.
  3. In another bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon salt until well combined. Gradually add this dry mixture into your wet ingredients while mixing on low speed until just combined.
  4. Gently fold in 1 cup of chocolate chips using a spatula until evenly distributed throughout the batter.
  5. Pour half of the batter into your prepared baking pan and smooth it out evenly with your spatula. Next, drizzle on about half a cup of creamy caramel sauce over this layer before topping with the remaining batter. Bake in your preheated oven for about 25-30 minutes or until golden brown.
  6. Once baked to perfection, remove from the oven and let cool in the pan for at least 15 minutes before lifting out using those handy parchment paper overhangs. Cut into squares and drizzle more caramel sauce on top if desired. Garnish with chopped nuts if desired.
