- 1/2 cup unsalted butter, softened
- 1 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs, at room temperature
- 1 cup all-purpose flour
- 1 tablespoon ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a large mixing bowl, beat together ½ cup softened unsalted butter with 1 cup brown sugar and ½ cup granulated sugar until fluffy.
- Add in two large eggs one at a time, mixing well after each addition.
- In another bowl, whisk together 1 cup all-purpose flour, 1 teaspoon baking powder, ½ teaspoon salt, and 1 tablespoon ground cinnamon.
- Gradually fold this dry mixture into your wet ingredients until just combined.
- Pour the batter into your prepared baking pan and smooth out the top with a spatula.
- Sprinkle granulated sugar on top.
- Bake in your preheated oven for about 25-30 minutes or until golden brown on top and set in the middle.
- Allow them to cool in the pan before slicing them into squares.
Notes
Store blondies in an airtight container.
Reheat in microwave for 10 seconds.
Serve warm with vanilla ice cream.
Use brown sugar for extra moisture.
