- 6 large eggs
- 1 cup whole milk
- 1/2 cup maple syrup
- 2 cups pancake mix
- 1 teaspoon baking powder
- 1 cup cooked chicken sausage or turkey bacon, chopped
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a 9×13-inch baking dish with cooking spray or butter.
- In a large mixing bowl, crack six large eggs and whisk them together until well combined.
- Add one cup of whole milk and half a cup of maple syrup into the egg mixture and whisk until blended smoothly.
- In another bowl, combine two cups of pancake mix with one teaspoon of baking powder.
- Gradually fold the dry mixture into the wet ingredients until just combined.
- Fold in one cup of cooked chicken sausage or turkey bacon (chopped) along with one cup of shredded cheddar cheese.
- Pour your batter into the prepared baking dish and spread it out evenly with a spatula.
- Place your casserole in the preheated oven and bake for about 25-30 minutes or until puffed up and golden brown on top.
- Let it cool slightly before cutting into squares.
Notes
Store leftovers in an airtight container.
Reheat individual portions in microwave.
Serve with maple syrup drizzle.
Use pre-cooked sausage for convenience.
