- 1 can black beans, rinsed and drained
- 1/2 cup breadcrumbs
- 1 small onion, diced
- 1 tsp cumin, freshly ground
- 2 cloves garlic, minced
- 1/2 cup bell peppers, diced
- 2 leaves lettuce, for serving
- 1 avocado, sliced
- 1/2 cup salsa
Instructions
- Start by mashing the rinsed and drained black beans in a large mixing bowl using a fork or potato masher until they reach a chunky consistency.
- Add in breadcrumbs, diced onion, minced garlic, cumin, and chopped bell peppers to your mashed beans. Stir everything together until well combined.
- With clean hands, scoop out about half a cup of the mixture and form it into patties about 3/4 inch thick. Place them on a parchment-lined baking sheet.
- Refrigerate your formed patties for at least 30 minutes.
- Heat a non-stick skillet over medium heat and add a drizzle of olive oil once hot. Carefully place each patty in the skillet and cook for about 5-7 minutes per side until golden brown and heated through.
- Grab some fresh lettuce leaves as your base, stack those glorious black bean patties high, then top with sliced avocado and salsa.
Notes
Store leftover black bean burgers in airtight containers for up to four days.
Reheat burgers in the oven for crispy texture and even warmth.
