- 2 cups all-purpose flour, sifted
- 1 tablespoon baking powder
- 1 teaspoon ground cardamom
- 1 cup granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs, at room temperature
- Zest of one large orange
- 1/2 cup freshly squeezed orange juice
- 1 cup chopped fresh figs
- 8 ounces cream cheese, softened (for frosting)
- 2 cups powdered sugar (for frosting)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
- In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, and 1 teaspoon of ground cardamom until well combined. Set this aside.
- In another bowl, cream together 1 cup of unsalted butter (softened) and 1 cup of granulated sugar until light and fluffy—about 3-5 minutes.
- Add in 4 large eggs one at a time, mixing well after each addition. Then stir in the zest of one large orange and 1/2 cup of freshly squeezed orange juice until smooth.
- Gradually add the dry mixture into the wet ingredients, folding gently until just combined.
- Gently fold in about 1 cup of chopped fresh figs until evenly distributed throughout the batter.
- Divide the batter evenly between prepared pans. Bake for about 25-30 minutes or until golden brown and a toothpick inserted into the center comes out clean.
- Allow cakes to cool in their pans for about 10 minutes before transferring them onto wire racks to cool completely.
- While waiting for your cakes to cool, beat together 8 ounces of softened cream cheese with about 2 cups powdered sugar until creamy and smooth.
- Once cooled completely, place one layer on a serving platter, spread some frosting on top, then carefully place the second layer on top. Top with additional frosting as desired.
Notes
Store leftover cake in airtight container.
Reheat slices gently in microwave.
Serve with whipped cream topping.
Use fresh figs for maximum flavor.
