Instructions
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Grab an 8×8-inch baking pan and line it with parchment paper, leaving some overhang on the sides.
- In a medium bowl, combine 1 cup of all-purpose flour, 1/4 cup granulated sugar, and 1/4 cup melted unsalted butter.
- Mix until crumbly.
- Press this mixture firmly into the bottom of your prepared pan.
- In another bowl, beat together 8 ounces of softened cream cheese, 1/2 cup granulated sugar, and 1 teaspoon vanilla extract until smooth and creamy.
- Add in chopped figs (about 3/4 cup) gently folding them in so they’re evenly distributed throughout the mixture.
- Spread the cream cheese filling evenly over the crust you created earlier.
- Smooth it out with a spatula.
- Place your pan in the preheated oven and bake for about 25-30 minutes or until set around the edges but slightly jiggly in the center.
- Once baked, remove from the oven and let it cool completely in the pan on a wire rack.
- Lift out using those handy parchment paper flaps you left sticking out earlier.
- Before serving, dust with powdered sugar for that picture-perfect finish.
- Cut into squares or bars as desired.
- Garnish with fresh figs or mint leaves if you're feeling fancy—and serve immediately.
