  • 2 large egg yolks, room temperature

Instructions

  1. In a large mixing bowl, use an electric mixer or your trusty arm strength to cream together 1 cup of room-temperature unsalted butter and ¾ cup of granulated sugar until light and fluffy—about 3-5 minutes.
  2. Next, add in 2 large egg yolks one at a time, mixing well after each addition until fully incorporated.
  3. In another bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and ½ teaspoon of sea salt.
  4. Slowly fold this dry mixture into your creamy butter-sugar mix using a spatula until just combined.
  5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat your oven to 350°F (175°C).
  7. Once chilled, remove the dough from the fridge and slice it into rounds about half an inch thick.
  8. Place them on a parchment-lined baking sheet about two inches apart.
  9. Bake in your preheated oven for about 12-15 minutes or until they turn golden brown around the edges.
  10. Just before they finish baking, pull them out briefly and sprinkle flaky sea salt on top.
  11. Let them cool slightly on the baking sheet before transferring them to a wire rack.
