- 1 cup unsalted butter, room temperature
- 3/4 cup granulated sugar
- 2 large egg yolks, room temperature
- 2 cups all-purpose flour, sifted
- 1 teaspoon baking powder
- 1/2 teaspoon sea salt
- flaky sea salt for sprinkling on top
Instructions
- In a large mixing bowl, use an electric mixer or your trusty arm strength to cream together 1 cup of room-temperature unsalted butter and ¾ cup of granulated sugar until light and fluffy—about 3-5 minutes.
- Next, add in 2 large egg yolks one at a time, mixing well after each addition until fully incorporated.
- In another bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and ½ teaspoon of sea salt.
- Slowly fold this dry mixture into your creamy butter-sugar mix using a spatula until just combined.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat your oven to 350°F (175°C).
- Once chilled, remove the dough from the fridge and slice it into rounds about half an inch thick.
- Place them on a parchment-lined baking sheet about two inches apart.
- Bake in your preheated oven for about 12-15 minutes or until they turn golden brown around the edges.
- Just before they finish baking, pull them out briefly and sprinkle flaky sea salt on top.
- Let them cool slightly on the baking sheet before transferring them to a wire rack.
Notes
Store cookies in an airtight container.
Reheat briefly at 350°F (175°C).
Serve with coffee or tea.
