- 2 cups heavy cream
- 3/4 cup granulated sugar
- 1 large fresh orange, zested and juiced (about 1/2 cup juice)
- 1 tablespoon agar-agar powder
- 2 tablespoons water

Instructions
- In a medium saucepan, pour 2 cups of heavy cream along with ¾ cup of granulated sugar.
- Whisk them together over medium heat until the sugar dissolves completely.
- Once your mixture is warmed through, remove it from the heat.
- Zest one large orange directly into the cream mixture before squeezing in the juice from both that orange and another half.
- In a small bowl, combine 1 tablespoon of agar-agar powder with 2 tablespoons of water.
- Stir until dissolved, then bring this mixture to boil in a small saucepan over medium heat.
- Once boiling, let it simmer for about 2 minutes before adding it into your creamy delight.
- Using a whisk or an immersion blender, blend everything together until smooth and free from lumps.
- Pour your creamy mixture into individual serving cups or one larger bowl.
- Cover them with plastic wrap and place them in the refrigerator for at least four hours—preferably overnight—to allow them time to set beautifully.
- Once set, serve chilled straight from the fridge!
- Sprinkle some fresh orange zest or top with seasonal berries just before serving.
Notes
Store leftover posset in airtight containers for up to three days.
Reheat gently on low heat, stirring constantly to maintain creaminess.
Serve chilled with fresh berries or a mint sprig for garnish.
Use fresh orange juice for brighter, more vibrant flavor in your posset.
