- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- 1/4 cup fresh basil leaves, finely chopped
- 1 large egg
- 1 teaspoon vanilla extract
- Powdered sugar (for optional icing)
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large bowl, cream together ½ cup unsalted butter and 1 cup granulated sugar using an electric mixer on medium speed until light and fluffy.
- Add in one large egg, 1 tablespoon lemon juice, 1 tablespoon lemon zest, and 1 teaspoon vanilla extract. Mix well until fully combined, scraping down the sides of the bowl as needed.
- In another bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking powder, and a pinch of salt. Gradually add this mixture to your wet ingredients while mixing on low speed.
- Once combined, gently fold in about ¼ cup finely chopped fresh basil leaves.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto your prepared baking sheets about two inches apart. Bake in your preheated oven for about 10-12 minutes or until they’re lightly golden around the edges but still soft in the center.
- Allow the cookies to cool on the baking sheet for five minutes before transferring them to wire racks. If you want to ice them, mix powdered sugar with lemon juice until smooth and drizzle atop cooled cookies.
Notes
Store cookies in an airtight container.
Reheat for a few seconds.
Serve with tea or lemonade.
