Instructions

  1. Gather all your ingredients on a clean countertop.
  2. Juice the lemons until you have about half a cup of fresh lemon juice and strain it to remove seeds.
  3. In a mixing bowl, combine the lemon juice with three tablespoons of olive oil, one tablespoon of Dijon mustard, and two minced garlic cloves. Whisk vigorously until blended into a beautiful emulsion.
  4. Fold in two tablespoons of rinsed capers into your lemon mixture gently.
