- 1/2 cup fresh lemon juice
- 1 tablespoon Dijon mustard, smooth
- 2 cloves garlic, minced
- 2 tablespoons capers, rinsed

Instructions
- Gather all your ingredients on a clean countertop.
- Juice the lemons until you have about half a cup of fresh lemon juice and strain it to remove seeds.
- In a mixing bowl, combine the lemon juice with three tablespoons of olive oil, one tablespoon of Dijon mustard, and two minced garlic cloves. Whisk vigorously until blended into a beautiful emulsion.
- Fold in two tablespoons of rinsed capers into your lemon mixture gently.
- Finely chop about two tablespoons of fresh parsley and sprinkle it into the mix. Stir gently until combined.
- Taste your creation and adjust seasoning with salt and pepper according to your preference.
