- 1 cup rolled oats
- 1 cup all-purpose flour, sifted
- 3/4 cup granulated sugar
- 1/2 teaspoon baking powder
- pinch of salt
- 1/2 cup unsalted butter, room temperature
- 1/2 cup freshly squeezed lemon juice (about three lemons)
- 2 tablespoons lemon zest
Instructions
- Preheat your oven to 350°F (175°C) while you prepare your ingredients.
- Grease an 8×8-inch baking dish with butter or line it with parchment paper for easy removal later on.
- In a large mixing bowl, combine 1 cup of rolled oats, 1 cup of all-purpose flour, ¾ cup of granulated sugar, ½ teaspoon of baking powder, and a pinch of salt. Stir until well mixed.
- Cut ½ cup (one stick) of room-temperature butter into small cubes and add them to your dry mixture. Using a fork or pastry cutter, blend until crumbly.
- Take about two-thirds of your crumble mixture and press it firmly into the bottom of your prepared baking dish.
- In another bowl, whisk together ½ cup of freshly squeezed lemon juice, 2 tablespoons of lemon zest, and one egg until well combined.
- Carefully pour the lemon mixture over your pressed crust layer in the baking dish.
- Sprinkle the remaining crumble mixture evenly over the top of the lemon filling.
- Bake in your preheated oven for about 25-30 minutes or until golden brown on top and set in the center.
- Once baked, let it cool completely in the dish before slicing into bars.
Notes
Store bars in airtight container.
Reheat briefly in microwave, enjoy!
Serve with whipped cream topping.
