Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour, sifted
  • 3/4 cup granulated sugar
  • 1/2 teaspoon baking powder
  • pinch of salt
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup freshly squeezed lemon juice (about three lemons)
  • 2 tablespoons lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) while you prepare your ingredients.
  2. Grease an 8×8-inch baking dish with butter or line it with parchment paper for easy removal later on.
  3. In a large mixing bowl, combine 1 cup of rolled oats, 1 cup of all-purpose flour, ¾ cup of granulated sugar, ½ teaspoon of baking powder, and a pinch of salt. Stir until well mixed.
  4. Cut ½ cup (one stick) of room-temperature butter into small cubes and add them to your dry mixture. Using a fork or pastry cutter, blend until crumbly.
  5. Take about two-thirds of your crumble mixture and press it firmly into the bottom of your prepared baking dish.
  6. In another bowl, whisk together ½ cup of freshly squeezed lemon juice, 2 tablespoons of lemon zest, and one egg until well combined.
  7. Carefully pour the lemon mixture over your pressed crust layer in the baking dish.
  8. Sprinkle the remaining crumble mixture evenly over the top of the lemon filling.
  9. Bake in your preheated oven for about 25-30 minutes or until golden brown on top and set in the center.
  10. Once baked, let it cool completely in the dish before slicing into bars.

Notes

Store bars in airtight container.

Reheat briefly in microwave, enjoy!
