Ingredients
Scale
- 2 cups whole milk
- 1/2 cup granulated sugar
- 3 large eggs
- 1/4 cup cornstarch
- 1 teaspoon pure vanilla extract
- 1 tablespoon agar-agar dissolved in 1/4 cup hot water
- Fresh berries (like strawberries or blueberries), ripe and firm
- Whipped cream (optional)
Instructions
- In a medium saucepan over medium heat, combine 2 cups of milk and ½ cup of sugar. Stir until the sugar dissolves completely.
- In a separate bowl, whisk together 3 large eggs and ¼ cup of cornstarch until smooth. Gradually add this mixture into your warm milk while stirring constantly to prevent any scrambling action.
- Continue heating the combined mixture over medium heat, stirring frequently until it thickens—about 5-7 minutes.
- Once thickened, remove from heat and mix in 1 teaspoon of vanilla extract and 1 tablespoon of agar-agar dissolved in ¼ cup hot water. Stir well until everything is fully incorporated.
- Pour half of your thick pudding base into serving glasses or bowls. Add a generous layer of fresh berries. Top with the remaining pudding mixture, smoothing out the tops with a spatula.
- Refrigerate the puddings for at least two hours or until fully set. Once set, top with whipped cream if desired and additional berries for flair.
Notes
Store leftover Malvern Pudding airtight in the fridge.
Reheat gently in the microwave, covered, for best results.
Serve with a drizzle of cream or fresh fruits.
For richer flavor, use high-quality vanilla extract.
