- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup whole milk (or almond milk)
- 1/2 cup melted coconut oil (or butter)
- 1 teaspoon vanilla extract
- shelled and unsalted pistachios, toasted
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan with cooking spray or line it with parchment paper.
- Roughly chop about half of your pistachios and set aside. Finely grind the other half until they resemble coarse crumbs.
- In a large mixing bowl, whisk together all-purpose flour, granulated sugar, baking powder, and salt until there are no lumps.
- In another bowl, whisk together eggs, milk, melted coconut oil (or butter), and vanilla extract until well combined.
- Pour the wet mixture into the dry ingredients and gently fold them together using a spatula until just combined. Sprinkle in the chopped pistachios and fold them into the batter.
- Pour the batter into the prepared loaf pan. Top with additional chopped pistachios if desired. Bake for about 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Let your pistachio bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Garnish with powdered sugar if desired.
Notes
Store pistachio bread in airtight container.
Reheat slices in toaster oven.
Serve with cream cheese spread.
