- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- 2 beaten eggs

Instructions
- Begin by peeling and cutting your potatoes into cubes.
- Place them in a pot of boiling salted water and cook until tender, about 15 minutes.
- Drain well and allow them to cool slightly before mashing until smooth.
- In a large mixing bowl, combine the mashed potatoes with shredded cheese, flour, salt, and pepper.
- Stir until fully incorporated.
- Take small portions of the potato mixture and shape them into sticks.
- Place them on a baking sheet lined with parchment paper as you form each one.
- Set up a breading station: dip each stick first into beaten eggs and then roll them in panko breadcrumbs until fully coated.
- Heat olive oil in a deep skillet over medium heat.
- Once hot, carefully add the sticks in batches—don’t overcrowd!
- Fry until golden brown on all sides, about 3-4 minutes per side.
- Once cooked, transfer your Potato Cheese Sticks onto paper towels to drain any excess oil.
- Garnish with fresh herbs if desired and serve immediately while they’re still warm and crispy.
