  • 4 boneless, skinless chicken breasts
  • 8 slices prosciutto
  • 1/4 cup fresh sage leaves, chopped
  • 2 firm apples, sliced (Granny Smith or Honeycrisp)
  • 4 tablespoons unsalted butter
  • 2 tablespoons cider vinegar
  • 1/2 cup chicken broth
  • 1 teaspoon agar-agar

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Gather all your ingredients, slice the apples thinly, chop fresh sage leaves finely, and lay out your prosciutto slices.
  3. Take one chicken breast at a time and lay two slices of prosciutto on a clean cutting board.
  4. Place the chicken breast in the center and sprinkle about half of the chopped sage on top.
  5. Gently wrap the prosciutto around the chicken.
  6. In an oven-safe skillet over medium-high heat, melt two tablespoons of butter until foamy.
  7. Carefully place each wrapped chicken breast into the skillet seam-side down.
  8. Sear them for about 4 minutes per side until golden brown.
  9. Once seared, remove the chicken temporarily from the skillet.
  10. Toss in sliced apples and remaining sage into the pan.
  11. Cook them for about 3 minutes until they soften slightly, then return the chicken back to the pan.
  12. Pour in half a cup of chicken broth and two tablespoons of cider vinegar over everything.
  13. Bring it to a gentle simmer.
  14. Transfer your skillet into the preheated oven.
  15. Bake for about 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  16. Serve warm garnished with fresh apple slices or extra sage.
