  • Total Time: 45 minutes
  • Yield: 8 servings 1x

Ingredients

Scale
  • 8 oz cream cheese, softened
  • 23 roasted jalapeños
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1 tablespoon garlic powder
  • 1 tablespoon lime juice, fresh

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the whole jalapeños on a baking sheet and roast them for about 20 minutes or until their skins are blistered and charred.
  3. Remove roasted jalapeños from the oven and let them cool before peeling off the skin.
  4. In a mixing bowl, add 8 oz of softened cream cheese.
  5. Using a hand mixer or spatula, beat the cream cheese until smooth and creamy.
  6. Once the roasted jalapeños have cooled down enough to handle, chop them finely, removing seeds if you prefer less heat.
  7. Add the chopped jalapeños directly into your creamy mixture along with 1/2 cup of shredded cheddar cheese.
  8. To your mixing bowl, add 1/4 cup of chopped green onions, 1 tablespoon of garlic powder, and 1 tablespoon of fresh lime juice.
  9. Stir everything together until all ingredients are well incorporated.
  10. Transfer your Roasted Jalapeño Cowboy Cream Cheese into your serving dish.
  11. Cover it with plastic wrap and refrigerate for at least one hour.
  12. Once chilled, give it a quick stir before serving.
  13. Garnish with additional chopped green onions or cilantro if desired.

Notes

Store leftovers in an airtight container.

Reheat gently in the microwave.

Serve with crackers or fresh veggies.
