- 1 cup cottage cheese, smooth and creamy
- 1 cup fresh strawberries, hulled and sliced
- 2 tablespoons honey or maple syrup
- 1 tablespoon lemon juice, freshly squeezed
- 1 teaspoon agar-agar powder
- 3 tablespoons water
- 1 teaspoon vanilla extract
Instructions
- Blend the cottage cheese until smooth and creamy.
- Hull and slice the fresh strawberries, then add half to the blender with the cottage cheese, honey or maple syrup, and lemon juice before blending into a puree.
- In a mixing bowl, combine the strawberry mixture with another cup of unblended cottage cheese and gently fold together until fully combined.
- Mix agar-agar powder with water in a small saucepan over medium heat, stirring constantly until it dissolves completely, then let it cool slightly before adding to the mixture.
- Add vanilla extract to the blended mixture and fold gently until evenly distributed.
- Transfer the mousse into serving cups or bowls and refrigerate for at least two hours or overnight, topping with remaining sliced strawberries before serving.
Notes
Store mousse in an airtight container.
This dessert is best served chilled.
Top with fresh strawberries before serving.
