Ingredients
Scale
- 1 cup unsalted butter, room temperature
- 2 cups granulated sugar
- 4 large eggs, room temperature
- 3 cups all-purpose flour
- 1 cup whole milk
- 1 cup pureed strawberries
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a bundt pan or loaf pan.
- In a large mixing bowl, cream together 1 cup of softened unsalted butter and 2 cups of granulated sugar until light and fluffy—about 3-5 minutes using an electric mixer.
- One by one, beat in 4 large eggs into the mixture until fully incorporated.
- In another bowl, whisk together 3 cups of all-purpose flour, 2 teaspoons of baking powder, and a pinch of salt. Gradually add this dry mixture to the wet ingredients while alternating with 1 cup of whole milk.
- Gently fold in 1 cup of pureed strawberries and 1 teaspoon of vanilla extract until just combined.
- Pour your batter into the prepared pan and smooth out the top. Bake in your preheated oven for about 55-60 minutes or until a toothpick inserted into the center comes out clean.
- Once cooled slightly, invert onto a serving plate. Garnish with fresh strawberry slices or whipped cream if desired. Serve immediately.
Notes
Store leftovers in an airtight container.
