  • Total Time: 1 hour 30 minutes
  • Yield: 24 servings 1x

Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • 2 cups powdered sugar
  • 2 tablespoons cornstarch
  • 3 tablespoons fruit juice (like blueberry or raspberry)
  • Meringue powder (as needed)
  • Sparkling sugar or edible glitter
  • Agar-agar (small amounts as needed)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together 1 cup of unsalted butter and 1 cup of granulated sugar until light and fluffy.
  3. Beat in 2 large eggs one at a time, then add 2 teaspoons of vanilla extract.
  4. Gradually mix in 3 cups of all-purpose flour along with 1 teaspoon of baking powder until combined.
  5. Scoop tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  6. Use your fingers or the back of a spoon to slightly flatten each mound.
  7. Bake in the preheated oven for about 10-12 minutes or until the edges start turning golden brown.
  8. Once baked, remove from oven and let cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
  9. While your cookies are cooling down, whisk together 2 cups powdered sugar, 2 tablespoons cornstarch, and enough fruit juice (start with about 3 tablespoons) until you achieve a thick yet spreadable consistency.
  10. If using meringue powder, add it according to package instructions.
  11. Once your cookies are completely cooled, spread a generous layer of icing over each cookie's surface using an offset spatula.
  12. While icing is still wet, sprinkle sparkling sugar or edible glitter generously over the top.
  13. Melt some agar-agar according to package instructions mixed with small amounts of fruit juice in separate bowls.
  14. Drizzle these colored mixtures onto your iced cookies in beautiful patterns to mimic nature's art!
  15. Let them sit until set (usually around 30 minutes).
  16. Garnish with additional sparkling sugar if desired and serve immediately.

Notes

Store cookies in an airtight container.

Reheat in the oven briefly.

Serve with colorful sprinkles alongside.

Use gel food coloring for vibrancy.
