- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup coconut oil, melted and cooled
- 1 tablespoon root beer extract
- whipped cream (store-bought or homemade)

Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it with cooking spray.
- In a large mixing bowl, whisk together 1 cup of all-purpose flour, ½ cup of unsweetened cocoa powder, 1 teaspoon of baking powder, and ¼ teaspoon of salt until well combined.
- In another bowl, beat together 1 cup of granulated sugar and 2 large eggs until smooth. Stir in ½ cup of melted coconut oil along with 1 tablespoon of root beer extract until fully incorporated.
- Gradually fold the dry mixture into the wet mixture using a spatula until just combined.
- Pour your brownie batter into the prepared baking pan and spread it evenly. Bake in your preheated oven for about 25-30 minutes or until a toothpick inserted comes out clean. Allow them to cool completely in the pan before frosting.
- Once cooled, spread a generous layer of whipped cream over the top. Sprinkle some chopped nuts or chocolate shavings on top if desired. Slice into squares and serve immediately.
Notes
Store brownies in an airtight container.
Reheat in the microwave briefly.
Serve with whipped cream topping.
Use chilled root beer for flavor.
